I think it's a missed opportunity for a good folksy saying if herpetologists don't commonly use the phrase "that man wouldn't know a terrapin from a cotter pin."

Yes, and most people who are bitten are, I believe, herpetologists and zookeepers who know what to do in the event of being bitten. Like you say, it's very rare for an average member of the public to encounter one, let alone be bitten.
