Today’s #KitchenSink experiment: roasted cauliflower soup topped with sliced Medjool date and cilantro leaves . This was soooo good and I’ll probably never be able to recreate it 😊

I roasted a head of cauliflower florets tossed with EVOO, cayenne, salt and pepper for about 20 minutes. Meantime, I sautéed a red onion and 3 crushed garlic cloves in about 2 T of butter. The roasted cauliflower got added to the onion and garlic, along with a sprinkle of ras el hanout. I added Better Than Bouillon vegetable broth to leftover chicken broth to make 4 cups and poured into the pot. Simmered about 20 minutes, added about 2 tsp sherry vinegar, then pureed using a stick blender. Added leftover heavy cream (about 1/4 cup) to the smooth soup.
