Maybe I would be more comfortable if Boxing had an "ippon" type rule - One clear, unambiguous blow to the head and the match stops and a winner is declared? I don't know, even that doesn't quite solve it I don't think.

Exactly - it is an attenuated version of 'real sword fighting' in the same way as boxing and Judo are attenuated versions of 'real unarmed fighting'. So, for me, that is not a distinction between Fencing , Judo and other combat sports which I am more comfortable with, and Boxing.

No That's not quite it, Both Boxing and Judo are 'attenuated' versions of "real fighting" - both have limits to allowed techniques and attacks, points systems, umpires etc. And Judo is not without the risk of serious injury or even death. Like I said, It's not an easy distinction to draw.
