Not *precisely* what you're talking about, but Wyatt Earp kinda gets this treatment. There have been a few movies made about him, most of them are at least embroidered a bit. Maybe a legendary cowboy like Jesse James, Wyatt Earp, etc? There aren't 100 movies about them, but there are definitely a lot (and also serials and things that predate film) and they've been heavily mythologized

Not quite the thing you're looking for, but I once wanted to write a book about Wyatt Earp in pop culture. Movies, TV shows, pulp novels...the Wyatt Earp story has been told a bunch of different ways, from gritty history to science fiction/fantasy.
