Pitmaston Pine is an interesting one. A small, hard apple, a textured green flesh, somewhat nutty and earthy in taste with a dollop of cream.
Holstein is just perfection. Extremely like a Cox's Orange Pippin I'd say, and once more this one was off the tree for a bit so it had that characteristic Cox's spiciness. Decently crisp, dense flesh, a little juicy, tart-sweet, quintessentially "apple-flavored".
McIntosh most people know. Soft white flesh, somewhat unpleasantly thick skin (though very flavorful), rosewater-like floral bouquet, and mine had been off the tree for a few weeks so it had sweetened considerably from the pleasant tartness often associated with it.
Gravenstein is one of my favorites this time of year. It's very Mac-like in some respects, soft white flesh, but with thinner skin, and the same floral/vinous sweetness and tartness.
