I swear I don't have a problem, this is just what fall looks like. 

I had no intention of making more honey but it's not going to be good weather for dehydration or smoking and I have a lot of Arapahos. Which are spicier than expected. I also used this as another experiment. 

These are packed more like my normal ferments packed down hard with a tamper to reduce air pockets and it creates more liquid, at the expense of integrity of the chilli slices. They should be densely packed enough to both avoid the well of honey at the bottom and any risk of the glass weight falling. 

The jars are powdered, dried peppers from last week/this weekend. How I discovered the Arapahos are spicier.
