Really young carrots are also high in terpenoids. So I suppose another theory would be that the industrial farmers found a way to achieve larger sizes more rapidly, and are now harvesting too early because they can.

They also have a high concentration of terpenoids when they're really young, so they can naturally taste soapy if they're harvested too early. But I think that's probably more common with homegrown carrots vs store bought.

The carrots are spending more time in storage. Ethelyne gas from other produce starts a chemical reaction in the carrots that generates terpenoids, aka the soapy taste. This can happen in the fridge but most likely the market is selling older product due to supply constraints or just capitalism.
