Demographics also help. I'd suggest that a zoo on the Isle of Wight is going to have a more upper middle class and more adventurous customer base than a zoo near, for example, Doncaster and can thus get away with a 90% plant based cafe menu.

Doncaster isn't even convenient for Doncaster? LBA is more convenient for Hull than DSA? EMA more convenient for Worksop or Retford than DSA? How ridiculous! You need to buy a map. Conversation over.
East Midlands is way easier to get to than Doncaster for all those locations. I don't live in Horsforth, my parents now live in Pickering. Doncaster is not convenient for Harrogate, Thirsk, Scarborogh, even Hull to Leeds is easier.
I now live abroad and I wouldn't fly into Doncaster as an alternative to Leeds. The transport links are worse than LBA by a mile. Doncaster isn't even convenient for Doncaster. I have family from Pickering to Sheff and no one flew from there.
And almost nobody is objecting to reopening Doncaster. Everyone wants it back...and it's already there!
Why is Doncaster an awful location? It might be for you in Horsforth with LBA in walking distance. It's not awful for South Yorkshire, North Notts, Lincolnshire, East Yorkshire and the Humber. And it has NEVER had a flight cancelled because of weather.
