You should check out Ironsworn, Starforged and Sundered Isles. They have cool solo modes and lots of tables of inspiration. There's some decent YouTube of it being played solo too. 😊

Ironsworn is fun solo too, but it really sings in co-op mode. We had the wildest stories materialize out of thin air, the Oracle tables in these games are the best I've ever seen.

Also, I believe that as a GM, you need to run the OG game a while before grokking the other games. Ironsworn works for me because I can see the PtbA matrix behind it.
