I made spanikopita once and it actually turned out pretty good, but it took HOURS of fussy prep. So, yeah, that's one to leave to the professionals.

I married a Greek. We had spanikopita this week. She would be proud, especially with that flaky filo on top. Well done. I make Haitian food trying to recapture what I've had in restaurants in Brooklyn and Atlanta. I understand that need to "make it taste like what I tasted."

Serious Eats has a good recipe for a herb laden spanikopita which I find quite good. You might consider checking this out if you want to move in a different direction.
