There was a book published at the turn of the century titled?unabashedly “Statistics in the XXI century”. It is a collection of 60 or 80 chapters, with 2/3 of them being applications in other fields. Not sociology but at least some connections are being made. Some of it looks naive 1/4 century later
You might find some leads in the work of Stephen Stigler, such as his book `The History of Statistics`. You can browse some of it on Google Books.

Not sure if this is exactly what you're looking for but Ian Hacking and Theodore Porter have great histories on the development of the field across different disciplines.
