Not the only reason to make them, but i do love my potato cakes and get quite irate if one of the barbarians i live with just eats the mash cold out of the fridge. I dip them in egg & then bread crumbs & fry gently in olive oil, then serve with whatever savory sauce i made that week.
Central Oklahoma just got dumped on after weeks of dry (flooded roads, all kinds of rain related traffic accidents). Maybe it's headed south next?
