You remind me that I need to get around to doing this as well. Have atrocious WiFi coverage and the consumer mesh thing we have isn't much help.

Multiple WiFi access points with a wired (even powerline ethernet if it works in your home) backhaul works well if you do it right. All the main living spaces have coverage from an access point with signal passing through at most one wall, and I've manually assigned channels.
