i dont hate simpler music off rip either. its just that its much easier to make simpler music by definition so a lot more of it is bad or uninteresting. complex music is much harder to make and is usually made by ppl who have studied music so theres a higher chance its compelling or interesting

Honestly when simple music is good, there's lot's of artistry in the production.
