So I guess I'm confused about what types of belief you think should be protected under the law, and which shouldn't?

I'm not sure any beliefs should be protected under the law. If any special protection is to be made, I would want it tightly constrained, perhaps to ethical beliefs that require the adherent to follow specific social practices, to the extent necessary to allow them to do so.
