Every so often I’ll wonder my skillset is at all valuable and think everyone already knows everything I know about accessibility and inclusive design Then I’ll get an accessibility question/problem that has a very apparent answer and then I’m like oh right. I’m pretty good at this.

Knowing things can feel less valuable than it is because you can trick yourself into thinking "well anyone could learn this". Always good to be reminded that someone has to be the designated knower.
Most major institutions haven't yet caught up with accessibility standards, including most universities in the US from what I can tell. It's a valuable skill especially if you're a big organization and like to avoid lawsuits.
