IMO it's not about class, it's about culture. US North East Coast is dominated by the legacy of European cuisine. South East is Black cuisine. Southwest is a blend of Black and Mexican. I don't know much about Midwest or North West.
The Northwest isn't monolithic and depending on what you call the northwest, you might be lumping together two different regions (The PNW and Mountain West). The PNW itself is eclectic in terms of cuisine, but influenced heavily by different Asian cuisines. Beyond that, it's a mix of Americana.
Because of long standing immigration from all over the world I’d hardly call the north east specifically European. Unless you’re just speaking about idk New Hampshire or something?
Midwest is this weird unholy blend of German, French, Italian, Russian and Black food cultures. There was so much segregation out here but so many different groups that you get little pockets of stuff everywhere. Chicago is probably the most egregious example.
European cuisine? Oh? You mean the extra spices one? Or the hotter than hell one? Or did we collectively forget east of Austria exists?
