When I think of Trek uniforms I think of Voyager/Lower Decks style. The season 3 and later Disco uniforms are so good though! They really did some wild designs that are such a delight to see.

If you like rich factional politics Deep Space 9 is the best out there. If you want more classic Trek, TNG is excellent, but feel free to skip episodes judiciously for the first couple seasons. If you want more comedy, Lower Decks is incredible but you'll miss a lot of jokes starting there.
