(you _carefully_ break the shell, pour the egg into your hands, and separate by letting the white slide between your fingers. I think best practice here is to have 3 bowls—one for the egg whites, one for the egg yolks, and one for separating over)

(biggest risk with this method is cutting the yolk when you break the shell; you can also rupture it with your fingers but that is in my experience rarer)
