I played it pretty recently after having barely played any of Splatoon 2, it's genuinely still fantastic. All the levels (of which there are a lot) have really fun gameplay and after getting to the end I still enjoyed redoing some missions with different weapons.

the fact that the last Salmon Run stage was specifically advertised as being the very last, while Lemuria Hub didn't get the same kind of confirmation, is evidence enough to me that there will be at least one more surprise map drop.
Zelda, Pokémon and Luigi's Mansion are currently planned for the American parks. So unless the new park in Britain suddenly decides to include new Nintendo IP, these three projects would have to be finished before Splatoon realistically has a chance.
From what I understand, these were simply drawn to have fun and fill up a portfolio. I believe a pitch for Splatoon in Universal existed at one point, but it didn't get far, and I'm afraid it'll be a long time before we see it get any representation in the parks.
