It's definitely easier to teach a record set or a tool. Frankly, I think a lot of people don't have the skill level or confidence to teach more advanced techniques. And I agree that beginners aren't interested, and a lot of content is aimed at them.

If I can jump in, I think methodology doesn't sound as exciting to beginners. Beginners in any discipline overestimate their skills, and it takes leveling up before they understand that methodology is essential. Many don't reach that level at all.
