If you're not doing that, you're not just not writing, there's a very real sense in which you're not thinking at all, at least in any sense in which I understand the term.
That thing about getting ideas into sentences being cognitive load... that is literally what writing *is*. And you don't *have* ideas, in a very real sense, until you've turned them into sentences yourself. There's a reason copyright law insists on a fixed form, not just an idea.
