So is it normal to just always start with a box? Sometimes I want to do a thin cloth/plane and will try and move and shape it but once I dynamesh to try and get more topology to work with it kinda ends up shattering with a lot of holes in the mesh
Very thin geometry and dynamesh don't mix. You'll get holes no matter what, if you use planes. Use thin boxes instead.
