If you have a corn allergy or intolerance, you quickly become hyper aware that corn and its derivatives are everywhere.

Learning how that came to be, which is multi-faceted, will help change things for the future.
I recently revisited an old favorite book called Salt Sugar Fat by Michael Moss, published in 2013, (and still very relevant to today.) The opening, and several places throughout, could be the inspiration for several scenes in the new Netflix movie, Unfrosted.

I highly recommend reading the book. It'll be eye opening. And, of course, Unfrosted is fun, too...especially in combination with Salt Sugar Fat.

According to the NIH’s publicly accessible All of Us research data, there are more corn allergy sufferers than sesame. They should add corn to the list for required food labeling, too. Access the data browser here: databrowser.researchallofus.org

Screen caps showing Corn IgE at 0.28% of participants and number 78 on the list and Sesame IgE at 0.22% of participants and number 93 on the list. Search was for serum IgE.
At the time of this viewing, comparing sesame to corn, there are more corn allergy sufferers than sesame.

The NIH is inviting one million people to participate in building “one of the most diverse health databases in history” which they hope will help to “find ways to treat and prevent disease.”

Since sesame was the most recent allergen added to the US list for required labeling in 2021, I wanted to see where it fell in relation to corn.
