I only teach online and hybrid classes, and I don't give any in-class exams except for an interpersonal speaking exam in hybrid sections, so "extra time" for me is simply an LMS setting. I don't have an office as an adjunct.
My students always seem surprised when I say, OK, yes, we will do these things in your letter and here's how. My concern is almost all students get the same accommodation--extra time on exams--and some don't use it. Seems like an easy way for an administrator to do a lot of letters fast.
