Arguably, VII. That's the first thing of its kind that Western audiences of A Certain Age ever encountered, and it became a cultural touchstone in a way none of the others did. (That's the only FF game I still remember specific characters and story beats from.)

Tbf I feel like 6 is pretty representative of everything before X, after X it all goes haywire and it's impossible to pick a single game that will give you a decent grasp of the series
