The problem is the spectrum of mayo application standards. I want to taste the other sandwich ingredients, not have my mouth coated in emulsified egg oil while globs of mayo plop out of the sandwich.

I am super weird about the ratio of EVERYTHING on my sandwich. I will disassemble and take things out if it’s a bad ratio. I don’t want 80 parts meat to 10 parts cheese, 10 parts lettuce. Make that shit even-ish! 😆 I like a good amt of mayo, but not glopping out. And the bread better be amazing!
