No, a receptionist or office assistant can do that. Paralegals (usually, depending on jurisdiction) have the ability to draft legal documents under the supervision of the attorney. So the paralegal often takes point on things like client meetings, drafting letters and petitions, etc.

In essence, a lot of the low-level, day-to-day work, which is billed at the paralegal's much more affordable rate, leaving the lawyer free for the more highly-technical stuff that either only lawyers do or lawyers are more efficient at, plus the in-court stuff lawyers HAVE to do.
