Replaying Planescape Torment recently I was drawn in by the Dustmen, a faction who essentially believe that a life chasing content is hollow, whereas a rival faction called the Sensates want to experience everything ever. It felt like a commentary on 100%ing games to me and I sided with the dustmen
100%ing these kinds of rpgs is a fast way to hate them, I've found When I beat a game I want to see a list of side quests that I look at with bored disdain, knowing I absolutely am okay with not doing them lol

That being said I have absolutely no faith in a Fallout 1 remake and would be immediately wary about one, were it to be announced.
It's a game that I'd love to see a faithful remake of, one that keeps the camera perspective and design principles but just polish things, finish a few of those bugged quest lines and make the last third not so painful to play through.
