Whats your poaching method?? i usually only poach chickem for use in chicken salad

So today I covered em in cold water (chicken broth if you have it), tons o dried herbs, salt and pepp, brought them to an almost boil, let ‘em almost simmer 10 minutes, then sit 15 minutes in the off heat! I had to turn them back on for a sec but they were 🤌
