I've never heard of quesadillas without cheese. I thought tortillas and cheese were the required ingredients for something to be a "quesadilla". Please enlighten me if this is incorrect.

Okay… as someone who has never ordered a quesadilla in Mexico… what's on the on-cheese version? Given its cheesey nature, I just assumed it was an American/TexMex invention.
