Apple is quite bad because it has so much garbage running in the background. You can steady the latencies with Linux/Pipewire. I don't like to use Linux for Linux but for this task it would be just genuinely better performer. No random events, pop up, sounds, latency peaks.

Yep, and I know that I can buy a sound card but the decrease in robustness is too much. It's sometimes useful enough that I can stand macOS. I use Mac Mini for production and macOS is bad but for production you can be more relaxed. It is just a DAW launcher, and beholder of proprietary plugins 🤷‍♂️
