Isn’t this only what airlines do habitually?
Not really (if I've understood correctly). You go to the airline website and it tells you a price for your flights, and that's what you pay. It doesn't up the price between your selecting flights and paying. However they do price "dynamically" so the price can vary from one minute to the next.
