I've never managed to grow decent aubergines. Fair do, you deserve a nice ratatouille. Mine always get inundated with whitefly and give up. I did get a few of them tiny patio type fruits one year.
Look up Serious Eats Provençal Tian. If you like ratatouille you may like that as well.
