The hard part of surgery and anesthesia is knowing what to do when things go wrong and reacting instinctively in the moment in the correct way. That comes with education and years of experience

Like, oh, a pharyngeal spasm after the patient is sedated but before intubation. I was very glad the anesthesiologist knew enough to get a pulmonologist and they both worked to open my airway. No way in hell any AI would be able to handle that.
