What's going on?
The roots of the spinach plant detect the presence of nitroaromatics in groundwater, a compound you usually find in explosives such as landmines. The carbon nanotubes in the plant leaves then emit a signal which is picked up by an infrared camera and sent back to a lab via those handy emails.
While it's only been used to detect explosive materials so far, scientists reckon it could easily be repurposed to warn us about pollution and other changes in environmental conditions.

Look at this thing of beauty. This won a Nobel Prize. The Hulse-Taylor binary pulsar system. Einstein's General Relativity predicts orbital period between these massive compact objects should decay (the solid curve is the GR prediction). Incredibly, observations match this almost perfectly. 🔭🧪

The first shows a straight line at the top of plot that is annotated with "line of zero orbital decay" and indicates the non-General Relativity model. The second curve is a decaying parobolic arch that is annotated "General Relativity prediction". Overlayed on this arc is a series of data points that match perfectly.
