Isn't there an old Dickinson textbook/general book on this? Or are you thinking more for teaching purposes? I think Organization of Learning by Gallistel may touch on this...

Thanks for the suggestions: just requested Gallistel from the library but I'm not sure which Dickinson you mean? Instrumental Behavor? I'm mostly interested in this to improve our animal training, but a bit of theory/science would be good too. It's a neuro lab, after all!
