I would have assumed that perlite and bark would have fantastic drainage. What should you use instead?

I think it was less about the substrate and more about the plastic pot that it was in. I live in a humid winter climate (temperate Mediterranean in the Inland NW USA) so it's pretty easy for things to stay too wet when I bring them indoors.
