Actually, one of my favorite things to do in the cooler months is to do a whole big set of roasted vegetables on one day, and then I eat off of them for the next several days, topping them with a fried egg, or adding rice, etc. I do several pans full of root vegetables, brussels sprouts, broccoli.

It is a beautiful thing to watch
