i normally go the mashed route for cheesy potatoes: do a quick mash with some extra butter, chunk a ton of sharp cheddar in, and if i'm feeling extra energetic slap it in a baking pan with some cheddar on top and broil it for a bit to melt/get brown on the edges.
If you have leftovers (and the mash has a good coarse texture) you can use them to make potato bread the next day.
