I would use a different letter and I think I actually avoid the "approximately equal to" symbols altogether though I don't know if I need to. So I go X, then the Binomial notation, then in words "X can be approximated by Y", then Y with normal notation.

I always use a different letter as they’re two different random variables

Nothing more to add here, I always have done Y to represent the new distribution (with the ~ sign)
