If you can, do it! As the page mentions, it’s super fatty and that renders, but we actually keep it in the fridge rather than pouring it off. It makes great cooking fat and really delicious fried potatoes!

I’m used to lamb being extremely fatty, but using the rendered spare fat for frying, that’s new and something i must try.
