Recettear... I love it so much. Its crazy nobody managed to make a real proper sequel yet, all other shop sims I tried fail in some way! Potionomics is the closest probably but it lacks the dungeon delving aspect for yourself and is also a card game.

If you can read Japanese, may I suggest Sarara's Little Shop (Dungeon Shoutenkai) or Atelier Viorate? Especially Vio is very flexible with playstyles and you can approach the game's goal in different ways
