Question for other faculty: does your institution offer clear guidance on how much committee work you are expected to participate in? Like number of committees, work hours/week, or anything like that? I have no idea where to draw the line.

Ugh, no. Service (committee work) can take over your life if you let it, and the institution is fine with that (in fact, they can't function without your service)
