What’s the proper color when you stop it? And do you aim for a cup of it or more?

Some people like a peanut butter color, more tan. I like a darker color, like a Hershey bar. I usually make 3 gallons of gumbo. It lasts us at least a week. That calls for about a cup of roux. But 3 gallons is a large pot. You could probably easily get away with less.
