tldr: make bacon in a pot -> replace bacon with potatoes & broth, boil them -> make a roux w/bacon grease & add to finished potato boil -> add extras -> serve with toppings

6 slices bacon

3 cups cubed Yukon gold potatoes
3 cups chicken broth (pre-made or from bouillon)

3 cups 2% milk
3 tbps flour

8oz (small bag) shredded cheddar
salt & pepper to taste
green onions

1 pot, 1 pan, 1 container for the bacon grease, 1 plate. makes ~4 hearty servings. took me like 45 minutes but you could be quicker.

1. chop bacon into 1" pieces or smaller. toss directly in pot and cook on medium heat until curled and browned. 

2. remove bacon, place on paper towel on a plate and set aside. pour excess bacon grease into a heat safe bowl.

3. use the same pot without cleaning. cube potatoes and add to pot. prepare 3 cups of chicken broth and add over potatoes. it's ok if the potatoes are above the water line. 

bring potatoes to a boil, then reduce and simmer covered until soft (10 - 15 minutes).
4. before the potatoes are fully done, start the roux(?). THERE ARE BETTER INSTRUCTIONS ON THIS STEP ONLINE. I added the bacon grease to warm milk and mixed it until it was incorporated; cold milk made the grease clump. then i added some flour in small amounts and whisked it. it did not thicken before i added it to the other pot. 

5. when the potatoes are done, squish some of them with whatever you got. then add the thing from step 4. stir it a bit and hopefully its thick. add shredded cheese and stir until it melts. add salt and pepper to taste.

leave some of the bacon out for toppings, and mix the rest into the pot. 

6. serve; add more shredded cheese to the top of the bowl; dice and add green onion for decoration; add bacon. take a photo and get reskeeted by a big account so you get ~20 notifications an hour for two days. you might need a long guy to pose with it

i didn't add normal onions or carrots to the boiling step because of food intolerances; same with the milk choice, you'll see variations online. didn't use sour cream. didn't use velveeta. i used powdered bouillon for the broth. you can use russets, the warm color came from the cheese
