What does one DO with it? Quince is the rootstock for one of my pear trees. A branch got away from me and now I have these rock hard fruits.
Quinces available in North America almost all need to be cooked. They can be part of a savory, Persian-style stew, or made into clear jellies or spicy chunky preserves.
