Grosser-Clarkson and Hung (2023) have a really nice article about this in the context of using the Flint water task for PSTs.

I have that one on my desk and haven’t read it yet, so not sure if these are in the same vein, but I loved reading Dear Citizen Math, which is about teaching math for SJ and also Engaging In Culturally Relevant Math Tasks, which provides a framework for creating and evaluating math tasks.
