I've seen ads for some AI software using the name, where the various people using it to wave their problems away suddenly sprout a big cartoonish puff of white hair + mustache, if that counts

This is because Salesforce (the company behind those ads) has licensed Einstein's name and likeness for the past several years from the Israeli university his estate was deeded to. They have been expanding what they slap the name on dramatically.
