As a cheesemonger I can tell you that a wheel of parm weighs around 80-90 pounds and she's hugging it like it's as light as a stuffed animal. I am in love with her.

Sorry to change the subject, but as a cheesemonger do you have any opinions on those videos I keep seeing of restaurants tossing pasta on hollows carved into wheels of parm? Seems wrong to me.
I tried making cheese a few times and I am just impressed that it isn't covered in gross mold.
